That's like saying three movies about the evolution of Bruce Wayne becoming Batman is about Batman, when in fact it's about Bruce Wayne. That's a different character, honestly.

Take someone sick enough to present it from is point of view (of doing the right thing against the bad Jedi) with an precedent of fighting hard with major studio to get what they want, maybe David Fincher or Darren Aronofsky. Del Toro is not a bad choice either.
