When a Jew wishes me a Happy Hanukkah, I embrace it. I don't get offended by it. He's wishing me good fortune in his own way. Why would that be taken badly? This man sees it the exact same way. Yesterday, at work and out in the world, a great many people wished me a Merry Christmas. I did the same for them. Nobody seemed scandalized, nobody tried to stop anybody from doing so.

I'm not sure what point you're trying to make. Not one of your links refers to someone getting upset for being wished "Merry Christmas".
There is this from the first link:

Who is stopping these people from celebrating Christmas? If you are at work than "Happy Holidays" or "Season Greetings" is the best thing to do because guess what moron, not every one celebrates Christmas. It's not about not offending, it's about including everyone. By saying something like "Happy Holidays" you are including everyone.

It's ridiculous. I'm an atheist, I don't really like Christmas but getting offended over that is pretty silly. It's a common saying around this time. People aren't trying to offend anyone.

How is it inclusion to say happy holidays instead of my tradition? If the only way to be multicultural is to try and blur the lines about which culture we celebrate, then multiculturalism has failed.

No one is stopping you from saying it in your private life. Also, it's inclusion because when you say it, it applies to everyone. Not everyone celebrates Christmas. Some celebrate Hanukkah, others Kwanzaa and others don't celebrate anything at all.

Some people are easily offended.

If it's not one thing that's offending them, it will be something else.
