I doubt you've ever gone inside a job site, but this is what ive seen from working in construction places like apartments and hotels. Everyone works out in the sun with little to no shade, (sometimes till they finish the roof). People climbing up ladders that are not properly secured, not using harnesses, and/or safety equipment. Some start as early as 6 am and end their day somewhere between 6-8pm. They also don't earn as much as they should, new workers usually earn a little below minimum wage, while professionals with a license can earn triple that amount. You do not have breaks every few hours like you would in any other job, the only time you can rest is during lunch time. They don't get healthcare and most employers won't offer them anything. I cant speak for everyone but most of them pay their taxes in hopes of being able to obtain a work permit or something that will let them stay in this country.
