I'm going to America next week.

So, I'm going to America next week. Mostly New York and Boston and all those other northern historical cities for a history trip run by my school.

I've been told that in America, because of the way your wages are set up, it rude not to tip most services. In New Zealand, we normally only tip waitresses and restaurant staff. Who should I tip and how much?

tip taxi drivers, restaurant servers, bar tenders, doormen who carry your baggage. thats basically it.

oh yeah and police who stop you for speeding and write you a ticket. 15% of the fine is a normal tip.

everybody expects a tip , even bartenders expect a tip for handing you a bottle of beer. %20 is usual since you can calculate it in your head easy. You should always tip people who handle your food , its the price you pay for getting spit free food.
