Imo empathy can't be learned from observing people, because let's face it, people are shallow dicks. Read some well known novels or Greek philosophy, anything that forces empathy on you through words. Good books draw a person into them, making it the readers world and thus experiencing empathy through neatly crafted shoes of others. This will you give "ideal" insight, which should be taken with a grain of salt in this world, nowadays.
