The first computers had less than 8 bits per byte. As they realized they needed more unique characters they added bits until they reached 8 bits, which gave them a workable 255 combinations. That was seen as more than enough so they stopped there. Going to a 10 bit system could have happened but 8 bits worked better in terms of it being part of the powers of two. A more logical jump after 8 bits would have been 16 bits, not 10.
